{"id":734,"date":"2012-06-14T07:38:48","date_gmt":"2012-06-14T14:38:48","guid":{"rendered":"https:\/\/archives.ravenandcoyote.net\/?p=734"},"modified":"2012-07-25T09:32:16","modified_gmt":"2012-07-25T16:32:16","slug":"khatte-aloo-sour-potatoes-madhur-jaffrey","status":"publish","type":"post","link":"https:\/\/archives.ravenandcoyote.net\/?p=734","title":{"rendered":"Khatte Aloo (sour potatoes) (Madhur Jaffrey)"},"content":{"rendered":"<p>Experiment #2 with the Indian Cookbook.\u00a0 These are stated as being a &#8220;street-side snack,&#8221; but I used them as a side for a mustard\/turmeric chicken that I&#8217;d jury-rigged from an idea that came when making the chow-chow the other day, and with the saute of vegets that I&#8217;ve already posted.<\/p>\n<p>Roasted cumin makes a lovely smell as you grind it.<\/p>\n<p>The chicken didn&#8217;t work out the way I&#8217;d wanted it too, should have gone for a longer marinade and more vinegar, but it was still really tasty.\u00a0 These were lovely.<\/p>\n<p>7 medium sized potatoes, boiled ahead of time, set aside for at least two hours to cool<br \/>\n1 1\/2 tsp salt (or to taste)<br \/>\n2-3 T lemon juice (or to taste)<br \/>\n2 tsp ground roasted cumin (shake seeds around in pan until they change colour, 3-5 minutes, and then grind up with method of your preference.\u00a0 I prefer mortar &amp; pestle + Kitchen Troll)<br \/>\n1\/4 tsp freshly ground black pepper<br \/>\n1\/4 &#8211; 1\/2 tsp cayenne pepper<br \/>\n2 T chopped Chinese parsley (didn&#8217;t have it, so didn&#8217;t use it.)<\/p>\n<p>Peel the cooled potatoes, and dice them into 1\/2 in cubes.\u00a0 (Or sort of combine cutting them up into bites and letting them fall apart into bites, which is more what the process seemed to be to me.)<br \/>\nPlace in large bowl.<br \/>\nAdd remaining ingredients.\u00a0 Mix well.\u00a0 Taste test.\u00a0 Serve as you like.\u00a0 (Apparently on a plate with toothpicks is typical.)<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Experiment #2 with the Indian Cookbook.\u00a0 These are stated as being a &#8220;street-side snack,&#8221; but I used them as a side for a mustard\/turmeric chicken that I&#8217;d jury-rigged from an idea that came when making the chow-chow the other day, and with the saute of vegets that I&#8217;ve already posted.
