{"id":710,"date":"2012-06-17T07:16:24","date_gmt":"2012-06-17T14:16:24","guid":{"rendered":"https:\/\/archives.ravenandcoyote.net\/?p=710"},"modified":"2012-07-25T09:31:49","modified_gmt":"2012-07-25T16:31:49","slug":"chicken-cooked-with-yogurt-madhur-jaffrey","status":"publish","type":"post","link":"https:\/\/archives.ravenandcoyote.net\/?p=710","title":{"rendered":"Chicken cooked with Yogurt (Madhur Jaffrey)"},"content":{"rendered":"<p>4 chicken legs<br \/>\n1 chicken breast<br \/>\n1\/2 c plus 2 T plain yogurt<br \/>\n5 medium onions<br \/>\n2 cloves garlic, peeled and coarsely chopped<br \/>\n1 inch cube fresh ginger, peeled and coarsely chopped<br \/>\n7 T vegetable oil<br \/>\n1 tsp salt<br \/>\n1\/8 to 1\/4 tsp cayenne<\/p>\n<p>Prepare chicken.<br \/>\nPut 1\/2 c yogurt in a bowl, add 3\/4 c water slowly, mixing as you go.<br \/>\nPeel onions.\u00a0 Cut 4 into 1\/8 inch rainbows.\u00a0 Chop the fifth onion coarsely.<br \/>\nTurn the chopped onion, garlic, giner, and 6 T water into a smooth paste.<br \/>\nHeat 5 T of oil over a medium heat.\u00a0 Put in the rainbowed onions and fry them until slightly carmelized.\u00a0 remove and set aside.<br \/>\nadd 2 more T of oil to the pot, and brown the chicken on all sides.\u00a0 remove and set aside.<br \/>\nturn heat to low and add paste.\u00a0 Scrape for meat drippings, and mix those into the paste.\u00a0 Raise heat to medium and fry, stirring, for 4-5 minutes.\u00a0 Add 1 T yogurt, scrape, continuing to fry and stir, about a minute.\u00a0 Repeat.<br \/>\nAdd the chicken pieces, the yogurt and water mixture, the salt and the cayenne.\u00a0 Stir and bring to a boil.\u00a0 Cover, lower heat, and simmer 20 minutes.<br \/>\nremove lid, raise heat to medium, and cook for 5 minutes or so, to thicken the sauce.<br \/>\nMix in onions, and heat another two minutes.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>4 chicken legs 1 chicken breast 1\/2 c plus 2 T plain yogurt 5 medium onions 2 cloves garlic, peeled and coarsely chopped 1 inch cube fresh ginger, peeled and coarsely chopped 7 T vegetable oil 1 tsp salt 1\/8 to 1\/4 tsp cayenne Prepare chicken.
