{"id":562,"date":"2012-08-29T07:37:17","date_gmt":"2012-08-29T14:37:17","guid":{"rendered":"https:\/\/archives.ravenandcoyote.net\/?p=562"},"modified":"2012-07-25T08:28:18","modified_gmt":"2012-07-25T15:28:18","slug":"rice-with-spinach-madhur-jaffrey","status":"publish","type":"post","link":"https:\/\/archives.ravenandcoyote.net\/?p=562","title":{"rendered":"Rice with Spinach (Madhur Jaffrey)"},"content":{"rendered":"<p>2 c long grain rice<\/p>\n<p>3 tsp salt<\/p>\n<p>1 1\/2 lb fresh spinach or 2 packages frozen<\/p>\n<p>6 T vegetable oil<\/p>\n<p>2 medium onions, peeled and finely chopped<\/p>\n<p>1 tsp garam masala<\/p>\n<p>Wash rice and drain.\u00a0 Cover with cold water and 1 tsp salt.\u00a0 Leave for 2 hours.<\/p>\n<p>If using fresh spinach:\u00a0 Fill a 4-6 quart pot with water.\u00a0 Add 1 tsp salt, and bring to a boil.\u00a0 Trim and wash spinach thoroughly.\u00a0 Wilt the spinach by dropping it, a little at a time, in the boiling water.\u00a0 As the spinach wilts, remove to a colander, and rinse with cold water.\u00a0 Press water out, and chop very finely.\u00a0 If using packaged spinach &#8211; prepare as per directions, then drain and squeeze.<\/p>\n<p>In a 3-4 quart oven and flame proof container, heat the oil, add the onions, and saute on medium 5 minutes or until golden.\u00a0 Add spinach and garam masala.<\/p>\n<p>Preheat onion to 300.<\/p>\n<p>Drain rice and add to spinach mixture with 2 1\/4 c water and 1 tsp salt.\u00a0 Bring to a boil.\u00a0 Lower heat and simmer 15 minutes, stirring occasionally.<\/p>\n<p>Cut aluminum foil to fit top of pot snugly.\u00a0 Cut a half inch diameter hole in the center.\u00a0 Put in over for 30 minutes.\u00a0 Check rice.\u00a0 If not done, cook another five.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>2 c long grain rice 3 tsp salt 1 1\/2 lb fresh spinach or 2 packages frozen 6 T vegetable oil 2 medium onions, peeled and finely chopped 1 tsp garam masala Wash rice and drain.\u00a0 Cover with cold water and 1 tsp salt.\u00a0 Leave for 2 hours.
