{"id":2924,"date":"2012-11-24T08:05:52","date_gmt":"2012-11-24T15:05:52","guid":{"rendered":"https:\/\/archives.ravenandcoyote.net\/?p=2924"},"modified":"2012-11-24T08:06:27","modified_gmt":"2012-11-24T15:06:27","slug":"parker-house-rollscloverleaf-rollshot-cross-buns-rombauer","status":"publish","type":"post","link":"https:\/\/archives.ravenandcoyote.net\/?p=2924","title":{"rendered":"Parker House Rolls\/Cloverleaf Rolls\/Hot Cross Buns (Rombauer)"},"content":{"rendered":"<p>Scald:\u00a0 1 c milk<\/p>\n<p>Add and stir until dissolved:\u00a0 1 T sugar, 2 T butter, 3\/4 tsp salt<\/p>\n<p>Sprinkle 1 pkg (2 1\/4 tsp) yeast over 2 T 105-115 degree water.<\/p>\n<p>Add the milk moisture to the yeast bubbliness once it has cooled to lukewarm.\u00a0 Beat in one egg.\u00a0 Stir in (somewhere in the vicinity of) 2 2\/3 c flour.\u00a0 Do so gradually, as you want the dough just properly workable, and if it tips over to too dry, none of these work very well.\u00a0 Start with stirring and shift to kneading once neccesary.\u00a0 Place in a greased bowl, brush with melted butter, cover and let rise until double.<\/p>\n<p><strong>Parker House Rolls<\/strong>:\u00a0 Roll dough out and cut rounds.\u00a0 Crease the middle, then fold and press edges.\u00a0 Let rise on a greased baking sheet.\u00a0 Bake at 425 for 20 minutes.<\/p>\n<p><strong>Cloverleaf Rolls<\/strong>:\u00a0 Punch down after that rising, and roll into balls.\u00a0 Size them so 3 of them will 1\/3-1\/2 fill a muffin round.\u00a0 Put three in each section of a muffin tin&#8230;\u00a0 or tins.\u00a0 Brush with melted butter, and then cover until doubled again.\u00a0 Bake at 425 for 20 minutes.<\/p>\n<p>Hot Cross Buns:\u00a0 Change the dough above by increasing the sugar to 1\/4 c and adding to the sugar:\u00a0 1\/4\u00a0tsp cinnamon, 1\/8 tsp nutmeg, 1\/4 c currants or raising, 2 T finely chopped citron.\u00a0 After first rising, shape into 18 balls and put on greased baking sheets.\u00a0 Cover and let rise until nearly double.\u00a0 Bake at 425 for 20 minutes, or until golden.<\/p>\n<p><strong>Milk Glaze for Hot Cross Buns:<\/strong>\u00a0 1\/2 c confectioner&#8217;s sugar, 2 T hot milk, 1\/4 tsp vanilla.\u00a0 Warming it over a double boiler will eliminate the weird taste powdered sugar often leaves in icing.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Scald:\u00a0 1 c milk Add and stir until dissolved:\u00a0 1 T sugar, 2 T butter, 3\/4 tsp salt Sprinkle 1 pkg (2 1\/4 tsp) yeast over 2 T 105-115 degree water.
