{"id":1959,"date":"2012-06-15T10:41:23","date_gmt":"2012-06-15T17:41:23","guid":{"rendered":"https:\/\/archives.ravenandcoyote.net\/?p=1959"},"modified":"2012-07-25T09:31:58","modified_gmt":"2012-07-25T16:31:58","slug":"la-stayle-chimichurri-tacos-vegetarian-times","status":"publish","type":"post","link":"https:\/\/archives.ravenandcoyote.net\/?p=1959","title":{"rendered":"LA Style Chimichurri Tacos (Vegetarian Times)"},"content":{"rendered":"<p>We tried this last night.\u00a0 Pretty tasty.\u00a0 I do suggest increasing the amount of all the spices, especially the pepper and cumin.\u00a0 We are also thinking of adding some bell peppers to the rice next time we do this.<\/p>\n<p>Rice:<\/p>\n<p>2 T olive oil<\/p>\n<p>1 medium onion, chopped<\/p>\n<p>1\/2 tsp salt<\/p>\n<p>1 c vegetable brother<\/p>\n<p>1 medium tomato, chopped<\/p>\n<p>1\/2 c brown or white rice<\/p>\n<p>Sauce:<\/p>\n<p>1 c cilantro<\/p>\n<p>1\/2 c Italian parsley<\/p>\n<p>1\/2 c olive oil<\/p>\n<p>1\/4 c lime juice<\/p>\n<p>2 T agave syrup<\/p>\n<p>4 cloves garlic<\/p>\n<p>1 tsp salt<\/p>\n<p>1\/2 tsp ground cumin<\/p>\n<p>1\/2 tsp black pepper<\/p>\n<p>Taco Filling:<\/p>\n<p>2 T olive oil<\/p>\n<p>8 ox sliced mushrooms<\/p>\n<p>1 15 oz can black beans, rinsed and drained<\/p>\n<p>&nbsp;<\/p>\n<p>Tortillas<\/p>\n<p>Rice:\u00a0 Heat oil, medium.\u00a0 Saute onion and salt.\u00a0 Stir in broth, tomato, and rice.\u00a0 Bring to a boil.\u00a0 Lower heat to medium low, simmer 15 (white rice), 45 (brown rice), or until broth is absorbed.<\/p>\n<p>Sauce:\u00a0 Put it all in a blender and get it nicely sauce-like.<\/p>\n<p>Taco Filling:\u00a0 Saute mushrooms in oil, add beans and 1\/2 sauce, cook until heated through.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>We tried this last night.\u00a0 Pretty tasty.\u00a0 I do suggest increasing the amount of all the spices, especially the pepper and cumin.\u00a0 We are also thinking of adding some bell peppers to the rice next time we do this.
